Here is a simple recipe for Kadai Bhindi that uses Mustard Oil:

Ingredients:

500g Bhindi

2 medium-sized onions, sliced

2 medium-sized tomatoes, chopped

1 green chili, chopped

1 tsp ginger paste

1 tsp garlic paste

1 tsp cumin seeds

1 tsp coriander powder

1 tsp red chili powder

1 tsp turmeric powder

1 tsp garam masala

Salt to taste

2-3 tbsp Mustard Oil

Coriander leaves for garnishing

Instructions:

 

Wash the Bhindi thoroughly and pat dry with a cloth or paper towel. Cut off the heads and tails of the Bhindi and slice them into 1-inch pieces.

Heat the Mustard Oil in a Kadai or a frying pan over medium heat.

Once the oil is hot, add the cumin seeds and let them splutter.

Add sliced onions and green chili to the Kadai and sauté for 2-3 minutes until the onions turn translucent.

Add ginger and garlic paste to the Kadai and sauté for another 2 minutes.

Add the chopped tomatoes to the Kadai and cook for 3-4 minutes until they become soft and mushy.

Add coriander powder, red chili powder, turmeric powder, and salt to the Kadai and mix well.

Add the sliced Bhindi to the Kadai and mix gently with the masala.

Cover the Kadai with a lid and let the Bhindi cook for 8-10 minutes on low heat. Keep stirring occasionally.

After 10 minutes, remove the lid and sprinkle garam masala on top of the Bhindi. Mix gently and cook for another 2-3 minutes.

Garnish with chopped coriander leaves and serve hot with roti or rice.
