Ingredients:
4-5 large potatoes, boiled and cubed
1 cup chickpeas, boiled

1/4 cup mint leaves, finely chopped
1/4 cup tamarind chutney
1/4 cup green chutney
1/4 cup yogurt
1/2 tsp chaat masala
1/2 tsp red chili powder
Salt to taste
6-8 papdi (crispy flatbread)

For the Basket:
1 cup all-purpose flour
1/2 cup water
Salt to taste

Instructions:
To make the basket, mix together the flour, salt, and water to form a smooth dough. Knead it for a few minutes, then cover it and let it rest for 15-20 minutes.
Roll out the dough into a thin sheet. Cut it into 4-inch circles using a cookie cutter or a lid. Prick the circles all over with a fork to prevent them from puffing up while frying.
Heat oil in a pan and fry the circles until golden brown and crisp. Drain on a paper towel and set aside.
To make the filling, mix together the potatoes, chickpeas, onions, tomatoes, coriander, mint leaves, chaat masala, red chili powder, and salt.
To assemble the chaat, place a papdi on a plate, and spoon the filling on top. Drizzle tamarind chutney, green chutney, and yogurt over the filling.
Place the fried basket on top of the filling and drizzle more chutneys and yogurt over it.
Garnish with chopped coriander leaves and serve immediately.
