Here is a recipe for Mushroom Jalfrezi
Ingredients:
2 cups sliced mushrooms
1 large onion, sliced
2-3 green chilies, chopped
1 tablespoon ginger-garlic paste
1 large tomato, chopped
1 teaspoon cumin seeds
1 teaspoon coriander powder
1 teaspoon cumin powder
1/2 teaspoon turmeric powder
1 teaspoon red chili powder
Salt to taste
2 tablespoons oil
Chopped coriander leaves for garnishing
Instructions:
Heat oil in a pan and add cumin seeds. When they start to splutter, add sliced onions and green chilies. Saute until onions are translucent.
Add ginger-garlic paste and saute for a minute until the raw smell disappears.
Add chopped tomatoes and cook until they turn mushy.
Add sliced mushrooms and cook on medium heat for 5-6 minutes until they release their water and start to shrink.
Add coriander powder, cumin powder, turmeric powder, red chili powder, and salt. Mix well and cook for 2-3 minutes.
Add 1/2 cup water, cover the pan and cook for 5-6 minutes until the mushrooms are cooked through.
Remove the lid and cook on high heat for 2-3 minutes until the gravy thickens.
Garnish with chopped coriander leaves and serve hot with rice or naan.
