Ingredients:
2 ripe mangoes
1 teaspoon mustard seeds
1 teaspoon fenugreek seeds
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
1/2 teaspoon salt
1/4 cup oil (preferably sesame oil)
1/4 cup vinegar or lemon juice
1/4 cup water
Instructions:
Wash and dry the mangoes. Cut them into small pieces and remove the
seed.
In a pan, heat the oil and add mustard seeds and fenugreek seeds. Fry
until they start to splutter.
Add the turmeric powder and red chili powder to the pan and fry for a
few seconds.
Add the mango pieces and salt to the pan and stir well.
Add the vinegar or lemon juice and water to the pan and mix well.
Cook the mixture for 5-10 minutes or until the mango pieces become
tender.
Let the pickle cool down and transfer it to a clean, airtight
container.
Serve and enjoy the instant mango pickle with your favorite Indian
dishes!
