Baingan ki Lonje is a delicious and popular traditional dish from the state of Uttar Pradesh in India. It is essentially a stuffed eggplant curry that is cooked in a rich and flavorful gravy. The dish has a unique blend of spices that gives it a distinct taste cooking oil for lowering cholesterol.

Ingredients:



4 small to medium-sized eggplants (baingan)

1 large onion, finely chopped

2 tomatoes, finely chopped

2 green chilies, slit

1 tablespoon ginger-garlic paste

1/2 teaspoon turmeric powder

1 teaspoon red chili powder

1 teaspoon coriander powder

1/2 teaspoon cumin powder

1/2 teaspoon garam masala

Salt to taste

Oil for frying

Fresh coriander leaves for garnishing

For the stuffing:



1/2 cup grated coconut

2 tablespoons roasted peanuts, crushed

1 tablespoon sesame seeds

1 tablespoon coriander seeds

1 teaspoon fennel seeds

1/2 teaspoon cumin seeds

1/2 teaspoon mustard seeds

1/2 teaspoon turmeric powder

1/2 teaspoon red chili powder

Salt to taste

Instructions:



Wash the eggplants and make a cross-shaped slit on each eggplant, ensuring not to cut them into two pieces.

In a pan, dry roast the grated coconut, sesame seeds, coriander seeds, fennel seeds, cumin seeds, and mustard seeds for a few minutes until they turn aromatic best cooking oil for diabetes. Remove from heat and let it cool.

Once the roasted spices have cooled down, grind them to a coarse powder in a blender or mortar and pestle. Add turmeric powder, red chili powder, and salt to the ground mixture and mix well.

Stuff each eggplant with this prepared spice mixture and keep the remaining spice mixture aside best healthy cooking oil.

Heat oil in a pan or kadhai and fry the stuffed eggplants until they turn golden brown. Remove the fried eggplants from the pan and set them aside.

In the same pan, add chopped onions and sauté until they turn translucent. Add ginger-garlic paste and green chilies and cook for another minute.

Add chopped tomatoes and cook until they become soft and mushy most healthy cooking oil.

Add the remaining spice mixture (from step 3) to the pan and mix well.

Add turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix everything together and cook for a few minutes.

Add water as needed to achieve the desired consistency of the gravy. Cover the pan and let the gravy simmer for about 10 minutes.

Gently add the fried stuffed eggplants to the gravy and coat them well with the masala. Cover the pan and let it cook for another 10 minutes on low heat is mustard oil healthy.
